This recipe is one of our favorite as well. Some Filipinos cannot afford to buy a shrimp. Instead of shrimp it can be replaced of “Tahong” or green mussels or any kind of shell & any affordable seafoods.
Ingredients:
- 8 oz (225g) linguine or spaghetti
- 1 lb (450g) large shrimp, peeled and deveined
- 4 cloves garlic, minced
- 4 tablespoons unsalted butter, divided
- 1/4 teaspoon red pepper flakes (adjust to taste)
- Salt and black pepper to taste
- 1/4 cup chicken or vegetable broth
- 1/4 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- 1 tablespoon lemon juice
- Extra parsley and grated Parmesan for garnish (optional)
Instructions:
1. Cook the Pasta:
- Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside.
2. Prepare the Shrimp:
- In a large skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and red pepper flakes. Cook for about 30 seconds, or until fragrant.
3. Cook the Shrimp:
- Add the shrimp to the skillet. Season with salt and pepper. Cook for 2-3 minutes on each side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
4. Make the Sauce:
- In the same skillet, add the remaining 2 tablespoons of butter, chicken or vegetable broth, and heavy cream. Bring to a gentle simmer and let it cook for 2-3 minutes.
5. Combine Pasta, Shrimp, and Sauce:
- Add the cooked pasta to the skillet with the sauce. Toss to coat the pasta evenly.
6. Add Parmesan and Fresh Parsley:
- Stir in the grated Parmesan cheese and fresh parsley. Cook for another minute, or until the sauce thickens slightly.
7. Finish with Lemon Juice:
- Squeeze the lemon juice over the pasta and give it a final toss.
8. Serve:
- Divide the pasta and shrimp among plates. Garnish with extra parsley and grated Parmesan if desired.
