TANTAMEN VEGAN

Soup Base
3 tbsp tahini

2 tbsp soy sauce

1/2 tbsp rice vinegar 

1 tbsp sesame oil

1 tsp rayu (Japanese red chili oil)

1 cup soy milk (250ml)

1.5 cup veg broth (300ml) 


Spicy Fried Soy/Tofu Crumbles
100 g soy meat or tofu 

1 tsp garlic, minced

1 tsp ginger, minced

1/2 tbsp soy sauce

1 tsp sake (optional) 

1/2 tbsp miso paste

1 tsp red chili oil 


Other Ingredients: 
2 portions of ramen noodles  

1/2 head of small cabbage, shredded

1 cup bean sprout

1/2 cup corn 

  • Additional garnishes: crushed peanuts, sesame seeds, sliced green onions, sliced garlic tops, soy sauce and rayu/red chili oil. 


Method

For the Spicy Fried Soy/Tofu Crumbles

  1. If using soy meat, soak in hot water for 5 minutes. If using tofu, crumble tofu until they resemble  minced meat. 
  2. Heat a small skillet over medium high heat with some sesame oil,  2 cloves of minced garlic and ginger. Add in the soy/tofu crumbles and then add in the sake, soy sauce, miso paste and red chili oil. Fry until the crumbles get slightly crispy (around 3-5 minutes) 

For the toppings

  1. Prep the vegetables by slicing them and steaming them for around 3 minutes. 
  2. Bring a medium pot to a boil and then cook the ramen according to instructions (around 5 minutes)

For the Soup Base

  1. Combine all the ingredients except the soy milk and broth into a bowl until a paste forms.
  2. Heat the soy milk and vegetable stock over medium low heat, then reduce to low as soon as you start to see bubbles. Whisk in the paste made earlier until dissolved. 

To assemble

  1. Place cooked noodles into a bowl. Pour over half the broth. Add on the fried minced soy meat, vegetables, additional garnishes and chili oil.

  • 3 tbsp. vinegar
  • 1 tbsp. corn or safflower oil
  • 2 tsp. salt
  • 1/4 tsp. ground black pepper
  • 1/4 tsp. basil
  • 1 tsp. instant minced onion
  • 1 medium cucumber, peeled and sliced
  • 3 large tomatoes, sliced and chilled

Preparation⇣⤵️

  1. Combine the vinegar, oil, salt, pepper, basil, and onion in a jar or shaker. 
  2. Shake the mixture well and pour it over the cucumber slices. 
  3. Cover this mixture and chill it for 1 hour. 
  4. Before serving, pour the cucumber mixture over the sliced tomatoes and mix gently.

VEGETABLE PAELLA

1/4 Cup Olive Oil (2 fl. oz)
5 Cloves Minced Garlic
1 Large Yellow Onion, chopped
4 Cups Vegetable Broth (32 fl. oz)
2 Cups Rice (16 oz)
4 Medium Tomatoes, skinned, seeded and chopped
1 Small Red Bell Pepper, seeded and cut into thin strips
1 Small Green Bell Pepper, seeded and cut into thin strips
1 Small Yellow Bell Pepper, seeded and cut into thin strips
1 Cup Green Peas (4 oz)
2 Cups Artichoke Hearts (14 oz) tough outer leaves removed and quartered
1 LemonLemon Wedges, to garnish

  • Heat the olive oil in a paella pan and saute the onion and garlic until the onion is tender and translucent. At the same time, heat the broth in a separate saucepan until simmering.
  • Pour the rice into the paella pan and saute for about 3 minutes. Add the bell peppers and tomatoes and cook for a further 3 minutes. Add the simmering vegetable broth and cook over medium heat for 20 minutes or until almost tender and almost all the liquid has been absorbed. Stir in the peas.
  • Sprinkle the artichoke hearts with a few drops of lemon juice and arrange over the rice in an attractive pattern. Continue cooking until the liquid has been absorbed and the rice is tender.
  • Serve the paella straight from the pan, garnished with lemon wedges.

EASY SUKIYAKI

Ingredients: (2 sevings 515kcal.)

7 oz. or 200 g. beef loin, thinly sliced
7 oz. or 200 g. shirataki filaments
1 3/4 oz or 50 g. scallions

mixture:
[A]-60cc. japanese wine(sake)
[A]-2 tablesppons sugar
[A]-3 tablespoons soy sauce

2 eggs

Procedures:
1.Roughly chop the scallions. Brieftly parboil the shirataki to extract the harsh taste, and cut into manageable pieces.

2. Put [A]mixture in a skillet, bring to a boil and add the meat and shirataki. When the meat turns whitish, add the scallions.

3. When the scallions are tender, break the eggs and slip them in. Cook for 20 to 30 seconds and remove from heat

ROULADEN

Ingredients:

  • 1 kl topside of beef, cut into very thin large slices
  • 1 onion, chopped finely
  • 2 pieces dill pickles, sliced lengthwise
  • 1 tsp prepared mustard beef fat, sliced
  • salt and pepper to taste
  • 1 tsp soy sauce
  • 1/2 Ajinomoto


Instructions:
  1. Flatten slices of beef  and spread with mustard, top with onions and sprinkle with salt and pepper.
  2. Arrange sliced pickle and beef fat over onion; roll tightly and fasten with toothpicks.
  3.  Heat a small amount of fat and brown she rolls; when golden brown add a little water and simmer about one hour or until tender, turning once in a while to prevent burning. 
  4. When almost done add soy sauce and Ajinomoto.
 
Make gravy as follow
:Mix 1/2 tsp flour and enough water to make a thin paste
:add to the liquid where the rolls have been boiled and put back to a boil.

ARROZ A LA CUBANA (Rice,Cuban Style)

2 tbsp cooking oil

2 cloves garlic, minced
1 onion diced
1 medium tomato, chopped
1/2 lb ground pork
1/2 lb ground beef
4 tbsp raisins

GARNISHES
4 tbsp cooking oil 
2 ripe plantain bananas, peeled and sliced diagonally
6 eggs

1. In hot oil, saute garlic, onions and tomato. Add beef and pork, saute until meats are brown.

2.Add raisins,1/2 cup water or stock, salt and pepper. Simmer stirring occasionally until most of the liquid has evaporated.

3. Add peas and continue cooking until peas are done and the mixture quite dry. Set aside,

4. Heat half of the oil for garnishes in a skillet and saute banana slices in it until light brown. Set aside.

5. Add the rest of the oil and fry eggs sunny side up until all are done.

6. To serve individually: Rinse a coffee cup with cold water. Pack cup with cooked rice and invert    it in the center of a dinner plate. Top rice with fried egg, place a 1/6 portion of the sauteed meat around the rice and garnish with fried bananas. To serve as main dish: Mound the rice on one side of a big platter, place the meat on the other side and arrange fried eggs and bananas around them.

SUSHI BALLS Temari-zushi

Since hindi ako makahulma ng sushi rice perfectly, coz ang paghulma daw ng sushi rice ay may tamang sizes & hindi daw pwede iba't-iba ang size lalo na kapag ihahanda sa party. But according to my former Japanese husband puwede daw gumawa ng sushi ball & it's very easy to make. Like any occasions such as birthdays, festivals,wedding, anniversary, these bite-sized balls are bright ang colorful. A different seasoning for each fish adds to the variety of flavors.

Make 30 lbs.

2 oz. or 50g. tuna fillet
2 oz. or 50g. sea bream
2 oz. or 50g. squid (body), cleaned and peeled
1 whole sayori (halfbeak)***
1/2 tablespoon Japanese rice vinegar
3 thin slices smoked salmon
6 sprigs kinome
2-3 tablespoons Japanese shoyu or soy sauce to serve

SUSHI RICE:
2 cups uncooked rice
1 sheet of kombu kelp, 2"x 2" or 5cm x 5cm
1/4 cup Japanese rice vinegar
1/2 tablespoon sugar
1/2 tablespoon salt

GARNISHES:
6 pcs. mi-zansho tsukadani seeds or capers
Wasabi & mustard
A little bit of mashed umeboshi

Method:
(1.) Prepare sushi rice as for Hand-Wrapped Sushi: wash and soak the rice in 2 1/4 cups of water at least one hour before cooking. Add the kombu kelp and place over high heat. Remove the kombu kelp once the water comes to a boil. Cook te rice over the low heat for 13-14 minutes. Turn up the heat brieftly, then remove from heat. Let stand for 8 minutes. Mix the vinegar with the sugar and salt. Dip the rice paddle in the vinegar mixture and use it to transfer the steamed rice to a handai or large shallow dish. Pour the vinegar mixture over the rice a little at a time and, with the paddle, mix in the vinegar swiftly but gently. Fanning the rice at the same time gives a better flavor.+++

(2.) Holding the knife at an angle, slice the tuna thinly into squares of about 1 1/2" or 3.5cm. Slice the sea bream and peeled squid in the same way. Cut the smoked salmon into squares the same size.

(3.) Fillet the sayori and rub vinegar into the skin. Peel off the skin from the head towards the tail. Cut into squares of 1/2" or 3.5cm.

(4.) Divide the rice into 30 portions. Lay a portion of rice on a piece of plastic wrap and twist the corners together, so that the rice forms a rough ball shape.

(5.) Lay a slice of tuna on a damp cloth and place the rice ball on top. Twist the cloth together to form a sphere. Press the top of each ball to set the fish in place. Repeat with the remaining rice and fish. When preparing the sea bream balls, sandwich a sprig of kinome between the fish and the rice.

(6.) Garnish the tuna balls with a dot of mustard,the squid balls with a dot of wasabi, the smoked salmon with mizansho and the sayori with wasabi and mashed umeboshi. Arrange the sushi balls decoratively on a serving dish and serve with small dishes of shoyu. Dip the balls in shoyu before eating.

*** Sayori (halfbeak) is a slender fish with white fish. It has a light and delicate taste. If unavailable, an uncooked ham (Parma, Bayonne, Westphalian, etc.) makes a subtitute.
+++ A fan to cool the rice. If a fan os not available, a piece of stiff card can also be used.

GREEK SANTORINIAN TOMATO RISSOLES

500 Gr. Tomatoes, rinsed and dried
2 Medium Onions, peeled and finely chopped (not grated)
1/4 Teaspoon PaprikaSalt and Black Pepper
1 Teacup Fresh Spearmint, finely chopped
2 Tablespoons Parsley, finely chopped
1 Tablespoon Olive Oil
150 Grams Flour, Self-rising
Sunflower Oil, for frying

  • Put the rinsed and dried tomatoes whole into a large bowl.
  • Squeeze and manipulate them with the hands, until they turn into a pulpy substance.
  • This is the only way to do it as you need the skins to give some substance.
  • Next, mix all the ingredients together, apart from the flour.
  • Add enough flour gradually to make a thickish but moist paste.
  • You will probably not need all the flour.
  • The mixture can now wait until it is time to be cooked and eaten.
  • Put about 2.5 cm oil in a large frying pan.
  • When the oil is hot, but not smoking, drop in tablespoons of the mixture and fry, turning the rissoles over once, until lightly golden all over.
  • Serve immediately.

GREEK'S BAKED AUBERGINE

1/4 Kg Chopped Onions
1/2 Kg Fresh Tomatoes
2 Cloves Garlic
1 Kilogram Round Eggplants (Aubergine)
Salt to taste
Pinch Pepper
Olive Oil

  1. Sautee the onions in a frying pan.Set aside.

  2. Clean, chop and mash the fresh tomatoes (use 2 cans of preserved chopped tomatoes if have). Mash the garlic cloves in a mortar. Mix the tomatoe mash with the garlic and onion

  3. Wash the eggplants. Slice them horizontally in slices of 1 1/2 cm width. Put the butter on a pan and place the eggplants slices. Simmer the tomatoe mash with the onions for a while. Then, pour the tomatoe mixture into the eggplant slices. Preheat the oven in 200 degrees C and bake for 45 minutes.

CHICKEN MEDITERRANEAN

1 tbsp grated lemon peel

1/2 cup water
1/4 cup lemon juice or calamansi juice
1 tsp thyme
1 tsp garlic salt
1/2 tsp black pepper
2 lb chicken, quartered
1 lemon, sliced
1/4 cup chopped parsley

  1. Combine the grated lemon peel, water, lemon juice, thyme, garlic salt and pepper. Spoon this mixture over the chicken, coating it well. 
  2. Refrigerated 4 to 4 hours, turning chicken in the marinade several times.
  3. Arrange the chicken in a single layer in a shallow baking dish. Save the marinade. Bake the chicken, uncovered, in a preheated 425 degree F oven for 25 minutes. 
  4. Pour off the fat that accumulates in the pan. Lower the heat to 350 degree F. 
  5. Brush the chicken with the reserved marinade and bake for an additional 25 to 35 minutes until tender and brown.
  6. Garnish with lemon slices and parsley.

1 cup diced celery
1/2 cup low-calorie bleu cheese dressing

LOW CARB EGG QUICHE

10 Eggs (Iodine Rich Foods)
1 cup Peppers, sweet, green, raw
2 tsp Parsley flakes
1 tsp Oregano
8 lb Chicken, cooked, diced
2 tbs Onion flakes
1/2 tsp Garlic powder
2 tsp Dried chili pepper flakes


Beat eggs lightly and stir in remaining ingredients. Blend in well. Pour mixture into 8 in pam sprayed cake pan and bake in preheated 350 oven for 30 minutes or until set. Cut into wedges and serve hot or cold.

SEAFOOD RISOTTO

Ingredients:⇣⤵️

2 tablespoons olive or vegetable oil

8 ounces uncooked medium shrimp(Iodine Rich Foods) (thawed if frozen), peeled and deveined

1 can (14 1/2 ounces) whole tomatoes, undrained

1/4 cup whole milk

1/4 cup butter or margarine

1 small onion, chopped (1/4 cup)

2 cups uncooked  rice

1 cup dry white wine, water or chicken broth

1/4 teaspoon salt

1/4 teaspoon ground cayenne pepper (red pepper), if desired

4 cups chicken broth

2 tablespoons chopped fresh arugula or spinach

1/2 cup grated parmesan cheese

Preparations:⇣⤵️

1. Heat oil in 12-inch skillet over medium heat. Cook shrimp in oil 2 to 3 minutes, stirring frequently, until shrimp are pink and firm. Place shrimp, tomatoes, and milk in food processor or blender. Cover and process about 1 minute or until smooth. (If you are up to chewing the shrimp, leave them whole and blend just the tomatoes and milk together in food processor.)


2. Melt butter in 3-quart saucepan over medium heat. Cook onion in butter about 5 minutes, stirring occasionally, until tender. Stir in rice. Cook about 5 minutes, stirring frequently, until edges of rice kernels are translucent.


3. Stir in wine, salt and red pepper. Heat to boiling; reduce heat. Simmer uncovered 10 minutes, stirring occasionally. Stir in broth. Cook over low heat 12 to 14 minutes, stirring occasionally, until liquid is absorbed.


4. Stir in shrimp and tomato mixture and arugula. Cook 3 minutes. Stir in cheese. Serve immediately.

Ingredients:

  • 1/2 kl tenderloin
  • 6 to 8 Chicken livers
  • 1.7 oz can mushrooms
  • 1 small can sweet peas
  • 4 pcs Vienna sausages
  • 3/4 cup bouillon
  • 2 tbsp Sherry
  • 1 tbsp Flour
  • 1 small onion, chopped
  • Butter for frying
  • Salt and pepper, to taste
  • 1/2 tsp sodium glutamate

Instruction:⤵️
  1. Brown chicken livers in butter, remove from a pan and set aside.
  2. Saute onion in butter, fry about 2 minutes, then add the sliced sausages. 
  3. Remove the pan from fire, add flour, and slowlystir in bouillon.
  4. Return the pan to fire, let the mixture boil, stirring constantly, then add livers sherry, peas and mushroom; simmer for a few minutes.
  5. Cut tenderloin about 1 inch chick slices and brown in hot butter in a separate pan. 
  6. Sprinkle with salt snd pepper and sodium glutamate; arrange slices on a serving platter and pour the sauce over them. 
  7. Garnish with triangle pieces of fried bread.

TRIFLE

Makes 8 servings

4 tablespoons granulated sugar
3 teaspoons cornstarch
1/8 teaspoon salt
1-1/3 cups low-fat (1%) milk
1 egg, lightly beaten
3/4 teaspoon vanilla extract
1-1/2 cups frozen fat-free whipped topping
1 ounce pkg lady fingers cookies (about 24), each broken in half
3 cups fresh raspberries (reserve 1/2 cup for topping)


1. In a medium nonstick skillet, whisk the sugar, cornstarch, and salt. Add the milk and stir to blend. Cook over medium heat, stirring constantly, until mixture bubbles and thickens, about 4 minutes. Remove from the heat.
2. In a small bowl, combine the egg with 1/4 cup of the hot mixture; stir to blend. Add back to the skillet and cook over medium heat, stirring constantly, until the mixture begins to bubble, about 3 minutes. Remove from the heat and transfer to a medium bowl; cool 5 minutes. Stir in the vanilla. Fold in 1 cup of the whipped topping until well blended.
3. In a deep 2-qt glass bowl, line the bottom and sides with 8 ladyfingers, breaking some if needed to fit. Sprinkle 3/4 cup of the raspberries in the bowl and top with 1/2 of the custard. Repeat another layer of 8 ladyfingers, 3/4 cup raspberries, and the remaining custard. Top with the remaining 8 ladyfingers, 1/2 cup of the whipped topping, and the remaining raspberries.
4. Cover and chill for at least 4-8 hours or overnight.

NOTE:
This recipe leaves out the rum but includes directions for making your own creamy custard. Ladyfinger cookies, sometimes called savoiardi biscuits, can be found in the specialty cookie section of some grocery stores and gourmet grocery stores, or sometimes in the freezer section of your grocery store. Fresh raspberries are the best, but an equal amount of frozen will work too; but don't thaw before using. This dish is best if made ahead 4-8 hours or overnight.
